The only thing better than fresh eggs from your chicken coop is fresh veggies from the garden.
So while Kate from Framed Cooks calls this weekly recipe a Farmer's Market Omelet, you could just as easily call it a Fresh Garden Veggie Omelet.
Or a Fresh Eggs Omelet with Veggies.
Or a Cheesy Veggie Omelet.
Either way, it combines some of my favorite flavors from the garden with cheese - because every good omelet recipe requires cheese - and some fresh basil!
Yum!
Of course you can use red tomatoes, but I just LOVE the sunshine-y cheerfulness of the yellow tomatoes with the sweet corn and bright green basil.
