Homemade Strawberry Soda

Make some homemade strawberry soda this summer with fresh sun-ripened strawberries! Healthier and more delicious than anything you can buy.


I am not normally a soda drinker by any stretch of the imagination, but come the summer's bounty of fresh strawberries, I love to make this easy, refreshing, four-ingredient strawberry soda. 


The best time to make homemade strawberry soda is when strawberries are at their peak of freshness. You can get away with far less sugar or sweetener with fresh, sweet berries.

See if there's a pick-your-own strawberry field near you. Not only is it a fun family day out, but you'll be able to handpick pick the freshest berries.

When you get back home, reward yourself with a refreshing glass of strawberry soda!


Homemade Strawberry Soda

(makes 8 glasses)

What you Need

2 cups of water
1-2 cups of sugar (feel free to substitute honey or any sweetener of your choice)
1 lb fresh strawberries, hulled and sliced
Club soda
Fresh mint leaves for garnish, optional

In a saucepan over high heat, stir together the water, half the sugar and strawberries and bring to a boil. Once boiling, taste, add more sugar if desired, then stir well and  lower the heat to a simmer and cook for 10 minutes or until strawberries soften and syrup thickens and starts to turn pink.

Remove from the heat, strain berries (they make wonderful shortcake!) and cool the liquid in refrigerator. Once cooled, pour 1/2 cup of the syrup into each of 8 Mason jars (moisten and dip rims into sugar for a festive touch) and then fill each glass with seltzer.

Garnish with a sprig of fresh mint and a whole strawberry, if desired.

Note: you can also use blackberries or raspberries to make different flavors. The syrup will last refrigerated for up to a week.
