Fluffy Vanilla Pancakes
(Makes six large 5"- 6" pancakes.)Ingredients
2 cups flour
4 teaspoons baking powder
2 Tablespoons granulated sugar
1 teaspoon salt
2 fresh eggs
1 1/2 cup milk
1 teaspoon vanilla bean paste or two vanilla beans, scraped
4 Tablespoons butter, melted

Whisk the flour, baking powder, sugar and salt in a large bowl.
In a small bowl, whisk the eggs, milk, vanilla and melted butter, then slowly add the liquid to the dry ingredients, whisking until just combined.

Using a ladle, pour the batter, one-sixth at a time, onto a medium-hot greased griddle or skillet.
Cook each pancake until bubbles form on the top around the edges.
Peek underneath to see if the bottom is golden brown and once it is, flip the pancake and cook until the second side is golden.
Use a spatula to transfer pancakes to plates and serve with butter, syrup, powdered sugar, cinnamon, fresh berries or fruit jam.
