Spring Veggie Carrot Leek Tart


Hopefully some of you are lucky enough to already be harvesting some early spring vegetables! 

Here in Maine, all I've got so far that's mature is my rhubarb, but soon enough we'll be picking all kinds of vegetables from the garden.

This week's egg recipe comes to you from Kate at Framed Cooks and makes good use of delicious leeks and carrots - two of my favorite spring crops! 

Kate says of her recipe, "This easy recipe for carrot leek mustard tart is a light and lovely spin on quiche, full of veggies with a zingy mustard flavor and a sweet drizzle of honey. Perfect for brunch or a light supper."
